I had this Old-Fashioned Potato Salad was close to the highest point of my re-make list since it's a late spring staple in our home and it absolutely helps me to remember something my grandmother would have made! Besides, with it being summer and all, what better time to re-share it?!

One of my preferred things about summer is the majority of the yummy nourishment! Nothing unexpected there! 🙂 We barbecue consistently, and regularly consistently. Due to these picnics, we have a significant cluster of side dishes we appreciate. One of my top choices is this Old-Fashioned Potato Salad – which is somewhat interesting a result of the amount I loathed potato plate of mixed greens as a child!

INGREDIENTS

  • 6 medium (2 pounds) potatoes, cut into bite-size chunks
  • 1-1/2 cups mayo
  • 1 tbsp. white vinegar
  • 1 tbsp. yellow mustard
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 medium (1 cup) stalks celery, chopped
  • 1 medium (1/2 cup) onion, chopped
  • 4 hard-cooked eggs, chopped

INSTRUCTIONS

  1. Place potatoes in a large pan and cover with water. Bring water to a boil and cook about 10 minutes or until tender. Drain.
  2. Meanwhile, mix mayo, vinegar, mustard, salt and pepper in a large plastic bowl. Add potatoes, celery and onion; toss gently. Stir in eggs. Cover and refrigerate at least 4 hours. Simple is best when it comes to recipes like this Old-Fashioned Potato Salad! It tastes just like grandma made it!
