This recipe makes 4 large muffin-shaped bakes which you could consume over two days. Serve with slaw, salad or cooked greens for a wholesome lunch option
- 2 large or 4 small garlic cloves, finely grated
- 1 red chilli, deseeded and finely chopped
- 1 tsp chilli powder
- 1 tsp ground cumin
- 2 medium courgettes, coarsely grated
- 6 large eggs
- 40g feta
- handful fresh coriander, chopped
- rapeseed oil, for greasing
- 1 tsp ground coriander
- 125g frozen peas
INSTRUCTIONS
