Croque Madame Taybake

INGREDIENTS
For the white sauce

  • 300ml milk
  • ½ onion, roughly chopped
  • 2 cloves
  • 1 bay leaf
  • 20g butter
  • 20g plain flour
  • 1 tbsp English mustard
For the sandwiches
  • knob of soft butter
  • 6 medium-sized slices bread, preferably sourdough
  • 6 slices cooked smoked ham
  • 6 slices gruyère
  •  or any other hard, melty cheese you have
  • 3 eggs
  • handful parmesan, finely grated

METHOD
  1. To make the sauce, warmness the milk in a saucepan with the onion, cloves and bay leaf. while boiling, turn off the heat and leave to infuse for 30 minutes, then stress.
  2. melt the butter in every other pan and add the flour. cook dinner for four-five mins till sandy. gradually whisk within the milk, then cook dinner over a medium warmth, stirring, until you have a thick sauce.
