Vegan Chickpea Cookie Dough made in a blender. A wholesome eggless no bake cookie dough recipe to satisfy that sweet teeth!
INGREDIENTS
- 1 can of chickpeas, drained and rinsed
- 1/2 cup peanut butter
- 2 teaspoons vanilla extract
- 2 1/2 tablespoons maple syrup
- 1/2 teaspoon cinnamon
- 1 tablespoon ground chia seeds
- 1/3 cup 60% cacao chocolate chips or cocoa nibs
INSTRUCTIONS
- Drain and rinse chickpeas. region in a paper towel, dry off. If a number of the skins begin to come off peel them off and discard. (this can help the cookie dough now not be as gritty)
- upload chickpeas, peanut butter, vanilla extract, maple syrup and cinnamon to a meals processor. combination till clean and creamy. upload the ground chia seeds to the meals processor. (to grind chia seeds upload them to a espresso bean grinder or a mortar and pestle) mixture till the whole lot is mixed.
- add chickpea cookie dough mixture to a small bowl. Fold within the chocolate chips.
- Serve at once.
- can be saved in an hermetic box in the refrigerator for up to 4 days.
