Essentially, a London Fog is an Earl Gray tea latte spruced up with vanilla and sugar. It's ideal lift me-up on a dismal day.

Thought to have started in Vancouver, it's a well known beverage in the Northwest.

Ingredients

  • 1 1/4 cup milk (any you prefer)
  • 1 1/4 cup water
  • 1 tablespoon earl grey loose tea (3 tea bags)
  • 1 tablespoon brown sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon dried lavender + extra for garnish

Instructions

  1. Boil water and steep Earl Grey tea and dried lavender for 8 minutes.
  2. While waiting for tea to steep, heat milk in a saucepan on low until small bubbles start to form along the sides. Take off heat and pour milk into a French press.
  3. Pump the French press plunger until milk doubles in volume. Set aside.
  4. Strain out and discard the tea leaves and lavender. Stir in sugar and vanilla extract into the tea.
  5. Divide the tea into two tea cups.
  6. Pour on top the frothed milk into both cups.
  7. Garnish with dried lavender.
