INGREDIENTS 
Sesame Lime Chicken Kebabs:

  • 2 tablespoons toasted sesame oil
  • 2 tablespoons fresh lime juice
  • salt & pepper
  • 1 lb boneless chicken breasts, cut into 1″ cubes

Spicy Peanut Sauce:

  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon low sodium soy sauce (or tamari for gluten free)
  • 1 teaspoon rice vinegar
  • 1 garlic clove, minced
  • 1/4 cup + 1 tablespoon creamy peanut butter
  • green onions, sliced {for garnish}
  • 1 teaspoon grated ginger {or 1/2 teaspoon of ground ginger}
  • 1/4 cup water
  • 1 tablespoon fresh lime juice

INSTRUCTIONS

  1. In a huge bowl, mix sesame oil, lime juice, salt, & pepper.
  2. upload cubed chook to marinade mixture, toss to coat hen.
